Ingredients:
Makes 4 servings
- 1/2 cup fresh cilantro
- 4 green onions
- 1 jalapeno pepper
- 1 1/2 lbs canned salmon
- 1 2/3 limes
- 12 corn tortillas (6-inch)
- 1 avocado
- 1 1/2 tbsp hot sauce
Instructions:
- Step 1:Chop cilantro. Thinly slice green onion. De-seed and mince jalapeno pepper. Combine all together in a bowl.
- Step 2:Flake salmon in small pieces into the bowl and toss to combine. Squeeze lime juice over the top. Fold gently to combine, seasoning with salt and pepper to taste.
- Step 3:Warm corn tortillas in the microwave for 10 seconds. Fill with salmon mixture. Top with sliced avocado and hot sauce. 3 tacos is one serving. Enjoy!
